Olive Garden Shrimp Scampi is such a classic dish – it's buttery and garlicky! This is one of my favorite dishes and it's such a delicious and light dinner – you'll love it!!!!
I have always had a deep love for the Olive Garden. If you didn't know I'm originally from Iowa and it was one of my favorite things to do – was go to lunch with my BFF at Olive Garden and shop at Kohl's. Those were the days!
Shrimp Scampi Ingredients
Scampi's main ingredients are butter & garlic – so if you have that – it's a good start. That said, here's everything you'll need:
- raw shrimp shelled and deveined
- olive oil
- sweet yellow onion
- white wine (or chicken broth)
- minced garlic
- parsley
- crushed red pepper
- butter
- angel hair pasta
How to make Olive Garden Shrimp Scampi recipe
This dish is a breeze to make! It goes together so quickly:
- you start the pasta water
- as it's starting to boil, sautee onion and garlic
- add the butter and wine – then reduce
- add raw shrimp and you're done!

You can easily swap out chicken broth for the wine.
What kind of white wine should I use?
A cheap one…I usually buy the mini bottles of chardonnay since I don't drink much.
Is Shrimp Scampi keto?
Well – if you don't eat it on pasta – sure!
What pasta goes best with scampi?
Shrimp is a very light "meat" so you're going to want to use a light pasta – something like bowtie would overpower it. I like angel hair or linguine the best.
Can shrimp scampi be served over rice?
Yes – if you'd rather have rice than pasta – that works!
Is shrimp scampi breaded?
No – not typically. It's just butter and garlic.
Is shrimp scampi spicy?
I added red pepper flakes – but just a few – add more if you like it spicier!
Is there cheese in shrimp scampi?
Not usually in it – but you sure can grate a little fresh parmesan on top!
Can you freeze shrimp scampi?
I wouldn't. Shrimp is such a quick cooking seafood – and the whole dish comes together quickly – you're going to be much better off not freezing it and having it fresh. What about reheating shrimp scampi? It's ok – but the sauce might separate a little and be very buttery – still good as long as you like butter! haha
Can shrimp scampi be reheated?
Yes – but I doubt you'll have any leftovers! If you do – reheat in a skillet on medium for 2-3 minutes – not too long or you'll shrimp will get rubbery and overcooked. I would not recommend microwaving – unless you like to bounce your shrimp like a rubber ball.

- 1 lb medium raw shrimp shelled and deveined
- 2 tbsp olive oil
- 1 sweet yellow onion diced
- 1/2 cup white wine (or chicken broth)
- 3-5 cloves garlic minced
- 3 tbsp parsley finely chopped
- 1 pinch crushed red pepper
- 4 tbsp butter
- 1/2 pkg angel hair pasta

Heat pasta according to package directions

HEAT oil in a saute pan. Add onion and sauté for 2 minutes. Add garlic and sauté for 1 minute; do not brown. Add butter, wine, red pepper, salt and pepper and reduce by half.

ADD shrimp and cook 1-2 minutes until fully cooked.

TRANSFER pasta to plate and top with shrimp mixture.
